Blueberry Cheesecake

For Crust

  • ½ cup (one stick) of melted unsalted butter
  • 2 1/3 cups of crushed graham crackers
  • A ¼ cup of sugar

For Filling

  • 1 16-ounce container of sour cream
  • 4-8 ounce of packaged cream cheese, room temperature
  • ¼ cup all-purpose flour
  • 1 ½ cups of sugar
  • 5 large eggs
  • 1 tbsp vanilla extract
  • ¼ cup milk

For Topping

  • 3-4 ounces of fresh blueberries or 12 ounces of packaged frozen blueberries, thawed and drained
  • 1/3 cup blueberry spread

Method Of Preparation

Making Crust

Keep a rack in the center of the oven and preheat to 357ºF. Wrap outer sides of 10-inch diameter spring pan with good quality foil. Combine unsalted butter, sugar and graham crackers in a food processor. Grind with on/off turns until crumbs are slightly moist. Press the resultant mixture firmly into the bottom of the prepared springform pan. Bake until the crust starts becoming brown for about 8 mins. Transfer the crust to the rack and let it cool. Maintain the temperature of the oven.

Prepare Filling

With the help of an electric grinder, mix sugar and cream cheese in a large bowl until thoroughly combined. Next, beat in flour. Add a single egg at a time and beat until well combined. Beat in milk, vanilla, and sour cream and pour the filling into the crust.

Keep springform pan in a large roasting pan. Pour hot water in roasting pan. The water level should be at least 1-inches up along the sides. Bake the cake for at least one hour or until the center, and the surface is golden brown and slightly puffed. Switch off the oven and keep the door shut. Allow cheesecake to sit in the oven for at least an hour. Remove the cake from roasting pan. Refrigerate for 6 hours or until cold. Cover and refrigerate again for overnight. 

Make Toppings

Take a large skillet. Stir in a blueberry spread on low heat until it melts. Remove from stove. Add blueberries and toss for coating. Spread blueberry mixture evenly over the top of the cake. Chill for 1 hour or up to 4 hours until cold. Run sharp kitchen knife around edges of the pan for loosening the cake. Release pan sides and transfer cake to a serving platter. Cut into wedges.

Recipe Tips

  1. For a thicker consistency, you can add more flour in the filling.
  2. If you don’t have a springform pan, use a regular pan and wipe its sides with a warm napkin for loosening the cake. This process helps in removing the cake easily. 
  3. Once the cheesecake slightly cools off, you can top it with thin layer sour cream for covering up the cracks and making it more tempting. You can also serve fresh blueberries and strawberries on the side.
