Preparation Method

  • Firstly, preheat your oven to 356 degree Fahrenheit.
  • Moreover, neatly line the base of a 9-inch springform baking pan with parchment paper.
  • Moreover, to prepare your crust, melt 85 grams of butter and combine Graham Cracker crumbs with 1 tablespoon of granulated sugar to form a sticky mix with a sandy consistency.
  • In addition, use this mix to form your cake base by pressing and leveling into the bottom of your springform pan.
  • Moreover, bake your crust for 10 minutes and let it cool without removing from pan, while you prepare your cheesecake mix.
  • For your cheesecake mix, use a table top mixer with paddle attachment to beat your 900 grams of Philadelphia cheese for about two minutes till it has a creamy consistency.
  • Moreover, put the mixer on low and put in to 250 grams of caster golden sugar, 3 tablespoons of flour and tiny bit of salt and paddle just two times
  • Now switch from the paddle attachment to whisk and gradually add 1½ tsp vanilla extract, 2 tsp lemon zest. You can also add 1½ tsp lemon juice at this stage. Moreover, put in your 3 large eggs and 1 yolk and gradually and whisk once or twice.
  • Take 200 ml of sour cream, stirring the carton well for a creamy consistency and add to the mix while continuing to whisk at low speed. Make sure your batter is light and airy to get the perfect cheesecake. Avoid over beating.
  • Once again line your springform pan with parchment paper, grease well and pour in the batter. Bake in a 428-degree Fahrenheit preheated oven for 10 minutes.
  • Reduce oven temperature to 220-degree Fahrenheit and bake for 45 minutes. Shake your pan to confirm that your cheesecake filling has a slight wobble.
  • Let your filling cool in the open oven for 120 minutes and then layer with a mixture of remaining sour cream, caster sugar and lemon juice for a beautiful topping
  • Last but not the least, freeze for 6 hours before your New York Cheesecake is ready to eat!
