Delicious blueberry cheesecake ice cream is a perfect way to your happy mood.

Serves: 2 quarts
½ cup water
1 tsp lemon juice
1 tbsp cornstarch
½ cup sugar
1 ½ cup fresh blueberries
For Graham Crackers
2 tbsp sugar
½ tsp cinnamon, grounded
1 cup graham crackers
½ cup butter, softened
For Blueberry Cheesecake Ice Cream
2 cup milk
1 pack heavy whipping cream
1 ½ cup sugar
One pack instant cheesecake
2 tsp vanilla extract
Take a small pan, mix cornstarch and sugar. Now mix water in it till it gets smooth. Put some blueberries and lemon juice and boil it over medium flame. Lessen the heat and simmer it for 5 minutes. Uncover it and let it boil. Keep stirring it and it will start turning thick. Now remove it, cover it and refrigerate it until it is chilled.
Now, in a bowl, take crackers, cinnamon and sugar and mix them in butter. Pour it in a baking pan and bake at 350 degree until it turns light brown. Bake it for 12 minutes approximately and then cool on a rack.
Take a bowl again whisk all the ingredients of ice cream in it and fill in cream cylinder as per the instructions given. Refrigerate the mixture and whisk it well before refrigerating it.
Now, take a container, put ice-cream in it and crumble the graham mixture and layer it on ice-cream and put blueberry sauce on it. Now swirl it and freeze it.
