Instant Pot Keto Cheesecake Recipe

For the crust

¾ cup almond flour

Two tablespoons sweetener

Two tablespoons melted butter

A pinch of salt

For filling

1-pound soft cheese

2/3 cup sweetener

One teaspoon lemon zest and lemon extract

¼ cup lemon juice

Two large organic eggs at room temperature

Two tablespoons heavy cream at room temperature

One tablespoon light cream


To Make the Shell-

Spread parchment paper in a large pot about 7 inches and oil it with butter, oil, ghee, or cooking spray

In a medium bowl, take out the above-measured ingredients almond meal, sweetener, and salt pinch. Now, slowly and carefully add the melted butter to the mixture and mix well. Knead the dough for a few minutes.

Spread the mixture or dough firmly on the large pot and gently flatten it with a glass or spatula.

Let almost crusty sit in the pot for a while

To Make the Filling-

To make Instant Pot Keto cheesecake, beat 1 pound of soft cream cheese into a large bowl and smooth. Now add 2/3 cup of sweetener to take erythritol powder sweetener. After that, add 1/4 cup of lemon juice, one teaspoon of lemon zest, lemon extract, and cheese cream. Whisk all these ingredients thoroughly to form a smooth and regular texture.

Beat two eggs with an electric whisk to make a foamy mixture. Now beat two tablespoons of heavy cream until it is well mixed and foamy. In a bowl containing the cheese cream mixture, mix the egg and whipped cream mixture with a rubber spatula to maintain the proper consistency.

Pour the entire mixture onto the almond peel in the pan and spread it evenly.

Cover the pot entirely with silver foil and paper towels from the bottom and above to prevent excessive moisture.

Pour some amount water on the shelf of the Pressure Cooker or Instant Pot. Place the pan containing the cheesecake in the pan carefully.

Close the Instant Pot’s lid and set its mode to manual. Let it cook for about 34 to 40 minutes under high flame. When the cooking time is over, let the pressure release from the pot for some minutes.

Take out the cheesecake, let it cool for a while at room temperature, and then chill in the refrigerator for 3-4 hours. Garnish with light cream and lemon zest.
