
Strawberry cheesecake is one of the most favourite recipes of all the cakes. It has a tangy flavour of strawberries and is authentic in most of the celebrations. There are many people who prefer strawberry flavour in cakes, so when it adds up with cheesecake it makes a perfect combination of strawberries with cheese. Cheese lovers can now enjoy their most loving cake with a new strawberry flavour in it and can get this cake anytime for themselves by baking at home.

Ingredients:

For The Crust
2 tbsp. sugar
pinch of kosher salt
15 graham crackers, crushed
5 tbsp butter, melted
For The Cheesecake
3 8-oz soft cream cheese blocks
1 cup sugar
One tsp vanilla extract
1 tsp lemon zest
3 large eggs
1/4 cup sour cream
Sliced strawberries, for garnish
For The Sauce
2 tsp water (or lemon juice)
1 cup strawberry preserves
Directions
Heat the oven to 325 degrees.
Take a 9-inch springform pan, oil it properly.
Take a large bowl. Put cream cheese and sugar powder in it and mix it well with a hand mixer. Form a smooth paste.
Add eggs in it and mix it till it combines well.
Now, add vanilla extract, lemon zest and sour cream.
Mix all of them really well.
Take graham crackers and place them in a plastic bag.
Now zip that bag and start crushing them.
Powder them finely.
Now pour them in a bowl.
Add butter, sugar and salt and mix it well.
Mix it gently.
Now spread its layer in a baking pan of 9-inch spring pan.
Now spread the cheesecake paste on the crust of graham cracker.
Bake it for around an hour and then cool it for around 60 mins in oven only.
Then refrigerate it for 4 hours.
Now, prepare glaze meanwhile.

Take a pan, and heat it on medium flame.
Mix strawberry preserves and lemon juice in it and mix it well until it becomes smooth.
Now, take the cake out of refrigerator and then spread fresh strawberries over the cake in a ring form or whatever style you want.
Spread or pour the glaze over the strawberries on cake.
Cut it in slices and serve cold slices to everyone.
Your strawberry cheesecake is ready to eat.
Tips:
Make sure you butter the bottom side of the pan before spreading anything so that when baked it does not stick on the pan. Spring form pans can leak as well, so to save your batter to not to leak from the pan, make sure it is thick. Also ensure that you choose a spring pan for cheese cake as you cannot invert it like other cakes when they are baked. Cheese cake is really soft so it can crack even. This is why spring pan is used, and most important thing, if a crack comes, do not panic. Just let it chill and it can be taken care of.
