To Make Crust
2 cups graham cracker crumbs
¼ cup of sugar
1/3 cup butter, melted
To Make Cheesecake
Four pack cream cheese
1 cup of sugar
½ cup sour cream
2 tsp vanilla
Heat Oven to 350 Degree F.
Take a large bowl, mix crumbs, butter, salt, and sugar together. Mix them evenly.
Pour the mixture into the pan and press it firmly in a 9-inch springform pan.
Bake it for around 10 mins or till the time it turns light golden.
Now, take another bowl and mix sugar and cream cheese with a hand mixer on medium speed. Keep scraping the sides of the container.
Low down the mixing speed and add cream and vanilla to it. Mix it well.
Add eggs one by one and mix on low speed till it mixes thoroughly.
Now, pour the filling on the crust and spread it equally.
Cover the bottom of the pan with foil. Seal it firmly to avoid water to get inside container.
Now, place the 9-inch pan in a large with hot water that should be 3/4 deep.
Ensure the water level does not come up.
Now, bake for around 70 mins or till the time centre is set but it will still jiggle, and edges will set.
Take a knife and run it carefully around the rim of pan and loosen the cake.
Allow it to cool for around an hour at least.
After covering, cover it up and put it in a refrigerator for around 6 hours.
Now, take it out and release the cake sides from pan and cut it into slices.
Your delicious cheesecake is ready to eat. You can store it in the refrigerator in an airtight container up to five days.
Ensure you do not overmix the batter as it will cause air to be in and it might get crack while baking. So, mix the mixture evenly.
Use a spatula or an offset spatula to spread the batter.
Make sure you double wrap your pan with a foil so that water does not go higher than a pot as you will give a water bather to your cake and foil is a preventive measure to avoid water leaking in cake and making it soggy.
Do not use a regular baking pan. As we are baking cheesecake so ensure you use springform pan because when the cake is baked, we usually invert it into plates, but it cannot be done with cheesecake. It is soft and custard-like, so springform pan has spring sides which can come up quickly and leaves the cake on the base.
